This is a riff on Swensen’s Ice Cream Parlor’s Tuna Salad Recipe. I used to waitress there in High School in the Santa Cruz and Scott’s Valley stores. People used to rave about their Tuna Salad and I think I remember the recipe right. I’ve been making it this way since then. Please read the notes at the bottom before preparing.
Preparation time: 15 minutes
Makes: 4 sandwiches
• 1 – 12 oz. Can of Solid White Albacore Tuna in water
• 1/3 Cup + 1 Tbl. Mayonnaise
• 3 tsps. Worcestershire Sauce
• 1 Tbl. + 2 tsps. Lemon, juiced
• 1 tsp. Dried Dill Weed
• 1/4 Cup Dill Pickles or Celery
• 2 Tbls. Onions, finely minced
• Salt and Pepper, to taste
Extra Ingredients to make into a Tuna Melt:
• Cheddar Cheese
• Bread of Choice / Chaffle/ or Keto Bread
• *Cayenne Pepper (Optional)
1.) Drain water from Tuna, and add to a medium sized bowl.
2.) Chop up your Onion and Pickles or (Celery, if subbing for the Pickles.) Add the rest of the ingredients to the bowl. Mix with a fork to break up and combine the Tuna. Taste to see if you need more Salt and Pepper.
3.) Serve it on Bread of choice or Lettuce Wrap.
4.) For the Tuna Melt, place Tuna Salad on toasted Bread of your choice. Top with some Cheddar Slices and Place under the broiler for 1-2 minutes until Cheese is melted. (Keep an eye on it)
5.) *Sprinkle with Cayenne if you want some spice, or omit if you’re not feeling it.
💙 The secret ingredient in this recipe is the Worcestershire Sauce. The original recipe from Swensen’s used Celery instead of Pickles. I prefer to use the Pickles. This really elevated the flavor.
💙 If you use a Chaffle as the base you don’t have to toast it. If you want to, just keep an eye that they don’t get too brown in the toaster.
💙 Chaffle Recipe In a medium sized bowl add 2 large Eggs, beat them then add , 2 heaping tablespoons of Almond Flour, to the bowl. Mix to combine and add in 1 Cup Grated Mozzarella. Mix it all up. Grate a little extra Cheese to sprinkle on top. Turn on mini waffle maker, spray with oil. Place about 2 tablespoons of batter onto waffle maker sprinkle a little cheese on top close the lid and give it a couple of minutes and remove and repeat. Makes 4 Chaffles. 💙 You can use any bread in this recipe that you want. Just toast it first before placing Tuna Salad on top. Then top with Tuna and Cheese of Choice. I like a nice Sharp Cheddar.
💙 This is also good in a Lettuce Leaf wrapped up. You could use a Low Carb Tortilla.
💙 Cayenne on top is optional. I just like the extra kick it gives the Sandwich.
