
This recipe uses Canned Coconut Milk to make a Sugar Free Condensed Milk that can be used in lots of different recipes. I used this in my Pumpkin Pie Recipe, Magic Cookie Bars and Fudge. Please see some notes at the bottom before preparing.
Makes: 1 -1/4 Cups
Preparation time: 40 minutes
Ingredients:
• 1 (13.5 fl. oz) Canned Coconut Milk Full Fat
• 6 Tbls. Salted Butter, cut into chunks
• 1/2 Cup Lakanto Golden Sweetener
• 1/8 tsp. Salt (You can add more if you want a salted caramel flavor)
Instructions:
1.) Place all ingredients into a medium sized saucepan. Put on low-medium heat. ( I had it on #4 on the dial of my electric stove)
2.) Stir continuously all around with a whisk for 35 minutes.

3.) Place into a medium sized jar. Once cooled cover and put into fridge, or use in recipe. It will thicken in the fridge so you’ll have to rewarm to make it pourable.

Notes:
💙 This is definitely a recipe for when you’ve got some time. You must stir it it the whole time, which takes about 35 minutes total. If it starts bubbling over then your temperature is too high. You want it bubbly but not bubbling over. I set my electric stove to setting # 4 and it took about 10 minutes for it to start bubbling.
💙 This recipe only works with full fat canned coconut milk. Try to find one with Guar Gum in it, the ones without don’t thicken the same. I have used Natural Grocer’s Organic Canned Coconut Milk and Simple Truth’s Coconut Milk and they’ve both worked. Make sure to not to get the Light Coconut Milk, it’s not as thick.
💙 If you want a salted caramel flavor you can add a bit more salt and taste to see if it’s to your liking.
💙 You could use this in Thai Iced Tea. If using from the fridge you will have to warm it up, and let it cool off before using. Unless you use it right after preparing.
