
I found a Lily’s Peppermint White Chocolate Bar at Natural Grocers. I wanted to pair it with a Chocolate Cookie.

Preparation time: 15 minutes.
Bake Time: 10 minutes.
Cooling Time: 15 minutes.
Total Time: 40 minutes
Makes: 2 dozen cookies

Net Carb per Cookie: 1.6 g
• 1-1/2 Cup Blanched Almond Flour
• 1/4 Cup Cacao Powder
• 1 Tbl. Coconut Flour
• 1/4 Cup + 2 Tbls. Lakanto Classic Sweetener
• 1/4 Cup + 2 Tbls. Lakanto Golden Sweetener
• 1/2 tsp. Baking Powder
• 1/2 tsp. Xanthan Gum
• 1/4 tsp. Salt
• 1/2 Cup Salted Butter, melted
• 3 Tbls. Lily’s Semi Sweet Baking Chips
• 1 Large Egg
• 1 tsp. Vanilla Extract
• 1 – 2.8 oz. Bar of Lily’s Peppermint White Chocolate Bar, chopped into chunks
• 1/4 Cup Lily’s Semi Sweet Baking Chips

1.) Preheat oven to 350•. Line cookie sheet with parchment paper.
2.) Melt Butter and 3 Tbls. of Lily’s Chocolate Chips in small saucepan over low heat. Stir often.

3.) In a large bowl mix all the dry ingredients. Stir to combine.

4.) Add Egg and Vanilla Extract to dry ingredients. Stir to combine.
5.) Add melted Butter and Chocolate mixture to the rest of the ingredients. Stir to combine.

6.) Add White Chocolate Chunks, and 1/4 Cup Lily’s Chocolate Chips to the dough. Stir to combine.

7.) Use 1-1/2 inch cookie scooper. Scoop and then flatten onto parchment paper. Bake at 350• for 10 minutes. Don’t over bake. Leave on cookie sheet until cool.

💙 White Chocolate is more prone to burning than Semi Sweet Chocolate so really keep an eye on these while baking. Make sure the white chocolate pieces are away from edges of cookies, so they don’t melt away.
💙 If you’re not a fan of White Chocolate you could use just Lily’s Semi Sweet Chocolate Chips . Just add 1/3 Cup total Semi Sweet Chips, instead of 1/4 Cup. You could also add some macadamia nuts with the double chocolate combo. Yum
💙 I baked mine for 10 minutes and left them on the cookie sheet to cool. Don’t try to move them when they’re warm or they will fall apart.
💙 Most Keto Cookies do not taste good warm from the oven like their regular counterparts. Let them cool for at least 15 minutes, before you sample them.
💙 Uncooked dough can be kept in refrigerator for 3 days or frozen for a week.
