I use this sauce for tacos, dipping sauce with veggies and salad dressing. This is the dressing for the Carnitas Salad.Preparation time: 5-10 minutes
Makes: 1 Cup
Ingredients:
2 Jalapenos, seeded and rough chopped (*reserve some seeds to add to mix if jalapeno isn’t spicy enough)
• 2 Cloves Garlic, rough chopped
• 1/2 Cup Cilantro, rough chopped
• 1 Lime, Juiced
• 1/2 Cup Mayonnaise
• 1/2 Cup Shredded Parmesan
• Salt and Pepper, to taste
Note: First taste your jalapenos. If they’re hot discard seeds if they’re on the mild side add in some of the seeds. Taste add more if needed.
Instructions:
1.) Add everything to blender and blitz. Taste to see you want more spice if so add some seeds, and reblitz.
If you don’t have a blender you can prepare in a molcajete. Instructions below.
I mixed the first four ingredients in a molcajete once combined I added the mayo and parmesan and pestle until well combined.
Keep refrigerated until ready to serve.
