Deviled Eggs

I have one of those hard boiled egg makers. For the first time ever they turn out perfect every time. You don’t need one but I found one on sale for $9 at TJ Maxx.

Ingredients

6 eggs

3 Tbls. Mayonnaise

1 tsp. Grainy Mustard

1 tsp. Pickle Juice (the brine from a jar of pickles)

1/4 tsp. Dijon Mustard

Place 6 eggs in your egg steamer or place 6 eggs into a sauce pan and cover with water. Bring to a boil. Put the lid on and take off heat and let it sit in the pot with the water for 18 minutes. When eggs are done place into a bowl with cold water.

Peel eggs, slice in half longwise. Place yolks into medium bowl with the rest of the ingredients. Mash with fork and spatula until well combined. Place into small Ziploc© bag and snip a corner and squeeze filling into the egg whites. I like to top with my Cajun Seasoning or Smoked Paprika, Salt, Pepper, Onion Powder, and Garlic Powder.

Makes 12 deviled egg halves.

Cajun Seasoning

1 Tbls. Smoked Paprika

1 tsp. Thyme

1 tsp. Onion Powder

1 tsp. Garlic Powder

1 tsp. Salt

1/2 tsp. Cayenne or less if you don’t love spice.
