Chili

Here’s my go to chili recipe. It takes about 20 minutes to prepare. It does need to simmer for at least 2 1/2 hours. I served it garnished with cheese, sour cream, and a few onions on top. I also served it with some Keto Cheddar Bay Biscuits. They taste kind of like Cornbread to me. (Link under recipe.)

Chili

Makes 5 Cups (1 cup servings)

Ingredients

-2 lbs. Ground Beef

-1/4 Cup Leftover Coffee

-1-1/2 Cups Crushed Tomatoes

-1 Cup Beef Broth

-2 Cups Water

-1-2 Chipotles in Adobo, finely chopped

-2 Tbls. Chile Powder

-1 tsp. Smoked Paprika

-2 tsp. Ground Cumin

-1-1/2 – 2 tsps. Salt (I used 2tsps.)

-1/2 tsp. Onion Powder

-1/2 tsp. Garlic Powder

-Black Pepper to taste

Garnishes (Optional, but good)

-Sharp Cheddar, grated

-Onions or Scallions, finely chopped

Directions

-Brown Ground Beef in large stockpot over medium/high heat.

-Add everything else and simmer for at least 2 and 1/2 to 3 hours on low to medium heat.

It will look watery in the beginning, but after 2 1/2 hours it will thicken.
