Cauliflower Mac and Cheese

Cauliflower Mac and Cheese

Makes 2 servings

-1-1/2 Cups Cauliflower, Small Florets

-1 Tbls. Bacon Fat

-2/3 Cup Cheese (Sharp Cheddar, Smoked Cheddar and Italian Blend)

-2 tsps. Heavy Whipping Cream

Salt and Pepper, to taste

Topping:

-Additional Cheese(to sprinkle on top)

-Chicharrones, Crushed Up (to put on top)

-Chop Cauliflower into small Florets.

-Preheat oven to 375 degrees.

-Place 1 Tablespoon of Bacon Fat on cookie sheet, spread it to coat pan.

-Place Cauliflower on Bacon Fat, add salt and pepper, and cook for 7-10 minutes. (You still want it to have some bite to it)

-Remove from oven, split Cauliflower between 2 ramekins.

-Place a teaspoon of Heavy Whipping Cream into each ramekin.

-Place 1/3 Cup Cheeses into each ramekin. (I used Sharp Cheddar, Smoked Cheddar and an Italian Blend)

-Bake for 5-7 minutes, at 375 degrees

-Take out of oven, stir until well combined.

-Sprinkle additional Cheese and Crushed Chicharrones, Salt and Pepper on top.

-Place under the broiler on low for a 1-2 minutes to melt cheese and crisp up Chicharrones. (Keep an eye out so it doesn’t burn)
