Carnitas Taco Salad With Jalapeno Cilantro Dressing

Yet another easy dinner you can make with a Porketta Roast. I found one by Carlton Farms Natural Pork that is seasoned. I throw it in the crockpot on high in the morning. By dinner time all you have to do is make the Dressing and chop salad ingredients.


4 lb. Seasoned Porketta Roast (or season your own with Paprika, Onion Powder, Garlic Powder, Fennel Seeds, Salt and Pepper)

2 heads of Butter Lettuce

1/2 Cucumber, Chopped

2 Avocados, sliced

Jalapeno Cilantro Dressing


Cilantro, chopped

1 Lime, cut into wedges

Chicharrones, crushed in your hand, to put on top

Cook Porketta Roast in the crockpot on high for at least 7 hours. You do not need to add any oil or water. Porketta Roasts have enough fat to keep them moist.

Chop Salad Ingredients.

Prepare Dressing.

To serve place lettuce on plate, top with purple cabbage, shredded pork (use 2 forks to shred meat), add cucumber,avocado and garnishes. Serve with the dressing on the side and wedge of lime.
