Blackberry Refrigerator Jam

Please read notes at the bottom of the recipe before preparing.

Makes 1/2 Cup

Preparation Time: 15 minutes

Ingredients:

– 1 Cup Blackberries

– 1 – 2 Tbls. Lakanto Monkfruit Classic Sweetener

1/2 tsp. Xanthan Gum

Instructions:

1.) Place Blackberries in a medium sized bowl.

2.) Add Lakanto Sweetener.

3.) Mash Berries with a fork, and stir to combine Sweetener. Taste and see if you like the sweetness level.

4.) In a small/medium sized pot, add the berry mixture. Use a spatula to get it all out of bowl.

5.) Add 1/2 tsp. Xanthan Gum. Stir to combine on low/medium heat for about 4-5 minutes. You want it to very gently bubble.

6.) Let cool and place into a small glass jar.

Notes:

-Place into fridge and consume within 3-4 days, or freeze.

-I don’t like sweet jam, so I used 1 Tablespoon of Monkfruit. Freshly picked berries are already a little sweet. So add 1 Tablespoon mix it up, and taste.

-You can always double or triple the recipe and freeze.

-You could add Jalapeño or Fresh Sage to this recipe when you place into pot, with the Xanthan Gum.

-You can serve this on your favorite Keto Bread with Butter, Peanut Butter or Almond Butter.

-Keto Crackers with Cream Cheese or Goat Cheese.

-Serve it with Pork Tenderloin or Pork Chops.

– Keto Pancakes or Waffles.
