Jalapeno Cilantro Dressing

I use this sauce for tacos, dipping sauce with veggies and salad dressing. This is the dressing for the Carnitas Salad.


2 Jalapenos, seeded and rough chopped(save seeds to add to mix if jalapeno isn’t spicy enough)

2 Cloves Garlic, rough chopped

1/2 Cup Cilantro, rough chopped

1 Lime, Juiced

1/2 Cup Mayonnaise

1/2 Cup Shredded Parmesan

Note: First taste your jalapenos. If they’re hot discard seeds if they’re on the mild side add in some of the seeds. Taste add more if needed.

I mixed the first four ingredients in a molcajete once combined I added the mayo and parmesan and pestle until well combined. You can also use a food processor or blender. Makes 1 cup. Keep refrigerated until ready to serve.
