These meatballs taste like the meat inside of a Gyro. Super quick and easy to prepare. I make the Tzatziki Sauce, and chop the veggies to go on salad, while meatballs are baking in the oven.
I like to serve it on Arugula tossed with Lemon, Olive Oil, Salt and Pepper. Then top it off with Onion, Cucumbers, Red Bell Peppers, Kalamata Olives, Tzatziki, and Feta Cheese.

– Avocado Oil (for coating pan and drizzling on meatballs before baking)
– 2 lbs. Ground Beef (85% Lean is what I used)
– 1/4 Cup Pork Rind Dust (Pork Rinds/Chicharrones ground into a powder in a food processor)
– 1/4 Cup Grated, Parmesan
– 1 tsp. Salt
– 1 tsp. Ground, Cumin
– 2 tsps. Garam Masala
– 1/2 tsp. Garlic Powder
– 1/2 tsp. Onion Powder
-Preheat oven to 425 degrees. Prepare 2 large roasting pans with tinfoil and generously coat tinfoil with avocado oil. Set aside.
– Mix all Meatball ingredients into large bowl until well combined.
-Oil Medium Sized(#40) Cookie Scooper. Scoop onto prepared pans. (If you don’t have one, just roll into an inch and a half sized balls.) Makes 60 Meatballs. Drizzle some avocado oil over tops of meatballs to give them a nice sheen.
-Bake for 20-22 minutes.
-While baking meatballs prepare Tzatziki and chop veggies for salad.
Note: If you’re making Coconut Naan Bread to make gyros, prepare that before starting meatballs.( Or make ahead and freeze)
Toss together Arugula, 1/2 a fresh lemon, 1-2 Tbls. Olive Oil, Salt and Pepper to taste. Then top with meatballs and additional toppings below.
